No Sodium Mojo Sauce

 here is the basic for 1 cup of marinade, scale up or down per needs (enough to cover a fresh ham or pork butt in a crock pot or enough for a hog on a spit of the size that could frighten small children! ;) 


 8-10 cloves of garlic, 
1/2 teaspoon fresh cracked black pepper, 
1 tsp oregano, 
1/4 cup of minced shallot or minced white onion.


 Put into a food processor to make a paste, then add 1 cup of sour orange juice (naranja agria) - can be found in latin aisles of your grocery store, or at latin markets, or you can make your own - 


2 parts oj, 1 part lemon, and 1 part lime juice (fresh squeezed is always best)
 if you wish it a bit more sour add white vinegar to taste. 
You can refridgerate or use right away.
 Usually good for 1-2 weeks in fridge. 
Incredible Garlic & citrus flavors.


Once the crock pot finishes off, we do a fork pull apart and then put it on french or sourdough sandwich rolls with a salt free mustard and salt free pickles and throw them in the george forman grill to press them and toast the bread to make the best Cuban sandwiches ever!

Low Sodium Sloppy Joes

1 1/2 pounds ground beef
1 onion, chopped
1 cup low sodium ketchup ( I used 1 cup of no salt added tomato sauce)
1 green bell pepper, chopped
2 tablespoons brown sugar
1/2 teaspoon garlic powder
2 tablespoon prepared mustard ( I used yellow mustard)
3 tablespoon  vinegar ( I used white wine vinegar)
1 tablespoon worcestershire sauce
1 teaspoon chili powder

In a skillet, brown beef and onion, drain.  Stir together remaining ingredients in slow cooker.  Stir in meat and onion mixture.  Cook on low for 6 to 8 hours or on high for 3-4 hours

What I did was.....brown meat and onions.  In a sauce pan mix all other ingredients together.  When meat is done add the sauce and mix together.

KC BARBECUE SAUCE

1 cup             low sodium ketchup
1 cup             no salt added tomato sauce
2/3 cup          brown sugar
2/3 cup           red wine vinegar
1/4 cup           molasses
2 teaspoons     liquid smoke
1/4 teaspoon    garlic powder
1/4 teaspoon    onion powder
1/4 teaspoon    chili powder
1/2 teaspoon    paprika
1/4 teaspoon    celery seed
1/4 teaspoon     ground cinnamon
1/4 teaspoon    cayenne pepper
1/2 teaspoon    black pepper

mix together over medium heat all ingredients in the order above....reduce heat to low, simmer for about 20 minutes.  For thicker sauce simmer longer, for thinner sauce less time is needed.
